It's autumn and it's fabulous!
Time to indulge in pumpkins, carrots, sweet potatoes, mushrooms, hazelnuts, walnuts, chestnuts and other divine -green turned orange- forrest foods.
Therefor i present to you this recipe. I got it from one of my dearest friends in Portugal: Noelia. She’s an inspirational person, lovely yoga teacher and expert in macrobiotic nutrition. This recipe is perfectly used after a day of wondering through the woods or being oh so busy behind your desk.
It provides all the warm sweetness we need after a long day of autumn chills!
Noelia's Sweet Stew:
* Carrots * Fenegreek
* Sweet Potato * Asafoetida
* Cabbage * Garam Masala
* Chestnuts * Soy Sauce/ Sea Salt
* Onion * Olive Oil
Heat 2 tablespoons of oil then add the spices and 4 tablespoons of water.
Add onion, carrot, potato, cabbage and some extra water.
Simmer for 8 minutes and add the chestnuts.
Let this boil for 5 minutes and add a bit of soy sauce or sea salt.
If you want you can use a little more olive oil and slowly simmer for as long as you want.
The longer you let it sit (not days of course ;)) the tastier it is!
